Dunk tek

Hello, I was curious to know if any of you practice dunking, I never did for years, I was just skeptical anyways. I have long since discovered it to be an essential tek for growing cakes and logs. I tried this both ways and was truly amazed and extremely happy once I started dunking my cakes and logs overnight in spring water. Post any comments please.

I think dunking is almost 100% necessary... There aren't many other ways to hydrate cakes. I have had cakes dry out at 90% humidity. I don't mess with cakes anymore though, because I use casings.
